Travel/Style Story: Hong Kong Style Haul
So sorry for the short hiatus. A couple days after I left Hong Kong, my dear grandma passed away. It was a tough time for me since she was one of my favorite people and her love for God was infectious. She always spoke of being with Jesus one day, and it brings peace to my heart knowing that she is no longer suffering and is now in the comforting arms of Jesus. I'm dedicating this post to my grandma since we share a similar love for fashion. Her style icon was Audrey Hepburn & she always kept up with the latest fashion while also being a smart shopper. She was brilliant with sewing and knitting allowing her to make her own clothes & for her family. Basically, she was amazing. There are so many memories with her that I will always cherish. I love her and miss her so much, but I'm thankful that this goodbye is not forever for us.
As you may have read from previous posts, I was in Hong Kong for a much needed vacation. And as always, shopping sprees are involved when I'm visiting this city because it is the place to find incredible clothes for a steal. Also, it's a chance to get a good look at new fashions and quirky Asian fashion which is always fun.

Travel Style Story: Hong Kong Island Adventure
I've been so incredibly lucky to have been able to travel to Hong Kong numerous times throughout my life and it never gets old. You'd think that Hong Kong is a tiny city, but you would be so wrong! Each section of it is worth spending a bit of time to explore and there are small islands and new territories to visit as well!

Style Story: Boho Chic
Hello from Hong Kong! Yes, I'm back again and pinching myself for being this fortunate to get to spend so much time here with my extended family. I'm on my two weeks of vacation between third and fourth of med school so I'm not going on any side trips to other countries in Asia and I'll be relaxing in this wonderful city the entire time. My plan is to eat back all the pounds I lost this past year (I may or may not have already accomplished this...) while scouring the street markets for great deals on clothes. I plan to share my fabulous bargain finds with you all soon, so stay tuned! Now on to this style story...

Style Story: Hong Kong Winter
While packing for my trip to Asia, I checked the weather forecast which informed me that it would be in the 60s. YES. Early Fall weather, my favorite!
What to bring? I decided on light layers, dresses & skirts. The heaviest item I brought was my North Face fleece since I needed something to wear in Chicago on the way to the airport. Too bad it still wasn't enough since I was frozen walking to the L, but thankfully the excitement of my new adventure helped me forget the cold.

Kitchen Story: Egg Waffles
One of my favorite street snack foods in Hong Kong are Gai Dan Jai, otherwise known as Egg Waffles or Mini Egg Puffs. They are never too sweet, perfectly crunchy on the outside, but fluffy on the inside and so delicious. This past visit to Hong Kong my mom and I searched for an egg waffle pan and then looked for the perfect recipe and I think we succeeded! It takes some practice, but once you get a hang of it, you'll be making these often.
You can buy your own Egg Waffle Pan if you live in the US and won't be traveling anytime to Hong Kong anytime soon from Williams-Sonoma. It's more pricey, but according to the reviews, it works pretty well. Does anyone know of another place to buy the pan for less in the States?
Egg Waffles
Ingredients:
5 oz. flour (Use a scale to weigh)
1-1/4 (1.25) tsp. baking powder
1 Tbsp. custard powder
1 oz. corn starch (Use a scale to weigh)
2 eggs
5 oz. sugar (Use a scale to weigh)
2 Tbsp. evaporated milk
5 oz. water
2 Tbsp. vegetable oil
In a metal bowl, mix together the flour, baking powder, custard powder and corn starch.
In a separate medium sized mixing bowl, beat the eggs and sugar with a whisk very well. Add the evaporated milk and mix well.
Add the dry ingredients and water to egg and sugar mixture in small batches and mix well. Once you have added all the dry ingredients and water and mixed well, add the oil. The mixture should be runny, but slightly thick.
Close your egg waffle pan and heat both sides of the pan over your stove on medium heat for 2 minutes on each side. Open the pan and lightly spray each side with oil spray. Fill one side of the pan with the mixture. The mixture should reach the top of the molds. Quickly close the pan tightly and flip the pan over. Cook on medium low heat for 2 minutes on each side. Once finished, remove the waffle. If it does not come out by itself use a toothpick to remove it.
Then, enjoy it! They usually sprinkle powdered sugar on it when I buy these from the street vendors, but I like spreading a bit of peanut butter on it instead. Mmm :)

Kitchen Story: Scallion Pancakes
One joy of being home is getting to cook with my mom. We love trying new recipes together & this time we attempted to make one of my favorite Chinese appetizers, scallion pancakes! I've always been afraid to attempt this dish because the process of creating layers and layers of dough to make these puppies just seemed daunting! But there has to be a reason why dim sum restaurants are able to pump these out quickly to their hungry customers, right? Right. There's an art to it that makes making the layers super simple. I hope you try this recipe because it makes the most delicious chewy yet flaky scallion pancakes. YUM.
Scallion Pancakes
Ingredients:
3 cups flour (Use a liquid measuring cup to measure!)
1 cup boiling water
1/2 cup room temperature water
green onions/scallions (as much as you want)
1-2 teaspoon salt
A few Tablespoons of Canola oil
Cooking oil for frying
Instructions:
Prepare your scallions by washing them, shaking off excess water and chopping them into small pieces. Then, mix the salt into the green onions.
For the dough, put the flour in a mixing bowl and add boiling water. Mix thoroughly. (It will be flaky.)
Add in the room temperature water gradually and knead the dough in between each addition of water.
Knead the dough until it does not stick to the bowl or your hands. If it still sticks, you can add some flour to the dough.
Place the dough into the bowl and cover the dough with a wet paper towel and let it sit at room temperature for 30 minutes. After 30 minutes, put it in the fridge for another 10-15 minutes.
Prepare your cutting board by sprinkling flour to ensure the dough will not stick. Take out dough and grab half of the dough and roll it out into a large thin sheet.
Pour a very small amount of oil onto the dough and spread almost to the edges. Sprinkle green onions on top.
Roll up the sheet (like a jellyroll). Pinch the ends and cut it into smaller sections (We cut it in half, but you can also cut it in quarters, etc). Pinch the ends of each section.
Place the dough so it's standing lengthwise and then press down the dough with the palm of your hands. Finish flattening the dough with the rolling pin to the thickness you want your pancakes.
~~~UPDATE~~~
These freeze really well! Just package them in freezer bags. When you want to eat them, defrost them in the fridge for a day, quickly re-fry them right before your meal and they taste fresh!
Heat cooking oil at medium heat in a frying pan. Once oil is heated, place pancakes in pan and flip once you get a golden brown color. Remove them from the pan once you get the desired golden brown color on both sides.
Then go ahead & enjoy them! Just look at those flaky layers! I can't believe we did it! :)
Travel Diary: Hong Kong Day 6
I am pooped. Got back to HK at 4:30am on a red eye and took a nap that was not long enough. I always regret taking red eyes...it messes up my entire day. But today was a fun-filled day since I got to spend quality time with friends and family!
LUNCH: Applegreen with Byron, Betsy & Jodi! It's always fun catching up with college friends! Undergrad seems like it was so long ago...anyway, this was an American restaurant and they had really good food.
We started off with apps, Asian Nachos and Cajun Fries in a Trash Can (loved the name & presentation); I got an orange sesame chicken salad. It was a half size, but so big for non-US standards!
Then we went to a cat cafe called "Ah Meow Cafe". Basically it's a "club" hidden away in an apartment complex where you eat amongst cats who lounge on your tables and chairs and leap across your food/drinks and possibly try to eat . This would definitely not exist in America...OSHA would be in hysterics. But there was a constant flow of cat-lovers filling the tables and other people's food looked pretty good. We opted for drinks and I got a cold hazelnut hot chocolate.
DINNER: My dad's birthday at Champagne House! It was a family dinner and yet another 10-course meal and their portions were huge. I'll let the pictures do the talking.
*HIGHLIGHT* of my day...at dinner my grandma told everyone at the table she didn't recognize me (She just saw me literally a week ago) because I got FATTER. Leave it to asian families to break it to you bluntly. Can someone please find me a workout routine that involves eating? Muchas gracias.
(clockwise): Duck, tofu, BBQ pork, roasted pork, "rubberbands" (jellyfish); chicken; fried rice; spring rolls with abalone and goose meat
(Clockwise): Lobster with (ee-mein) noodles; Sea cucumbers, lettuce and mushrooms; clams, squid and veggies; shark fin soup
My cousin bought a black forest cake for my dad and my dad thought the peach cakes (a delicacy) on top were real, but it was just made out of sugar. Sob story.
